Mother’s Day 2023 - Special Meal Recipes For Your Dear Mom

Mothers are special! There’s absolutely no doubt in the statement, & special moms do need a special day to be praised & pampered; Mother’s Day 2023. Well, why not do that with a special full course meal with a refreshing appetizer, a delicious main course, a lip smacking drink, ending with a refreshing fruit dessert!? 

We, at Milkbasket, are celebrating Mother’s Day with a very special collection, dedicated to our beautiful mothers & we would love to share these easy & delicious recipes with you so that you could make your mom feel special by cooking for her & enjoying a meal date with her that you prepared with love, pride & joy. Cooking For Your Mom On Mother’s Day 2023👨‍🍳

Cooking a special meal for your mom is a great way to show your love & appreciation for all that she does. It’s a thoughtful & personal gesture that demonstrates your care & attention to detail. By taking the time to plan & prepare a meal, you are showing your mom that you value her & want to make her feel special. 

It’s a wonderful opportunity to spend quality time together & create lasting memories that your mom will cherish for years to come. Overall, cooking a special meal is a beautiful way to express your gratitude & love for your mom on Mother’s Day 2023.

▶️ The Appetizer – Creamy Pasta Salad

Creamy pasta salad is the perfect appetizer for Mother’s Day because it’s light, refreshing, & delicious. With its combination of tender pasta, crisp vegetables, & creamy dressing, it will definitely put a smile on your mom’s face!

Ingredients:

  • 250g elbow pasta
  • 1 cup celery, diced
  • 1 cup red & green bell pepper, diced
  • 1 cup carrots (shredded)
  • ½ cup onion, diced
  • ½ cup green onions
  • ½ cup cheese, shredded
  • ½ cup mayonnaise
  • 3 tbsp Mustard Sauce
  • 2 tbsp lemon juice
  • Salt & pepper to taste

Instructions:

  • In a large pot, bring the water to a boil. Stir in the salt.
  • Add the macaroni to the water, and stir a few times to prevent the pasta from sticking together.
  • Cook the pasta according to the package instructions (about 10-12 minutes), occasionally stirring, until al dente or softer according to the desired texture. 
  • Once the pasta is cooked, drain the excess water and keep it aside.
  • Mix together the mayonnaise, yellow mustard, white vinegar, red chili powder, sugar, salt, and ground pepper in a large bowl.
  • Stir in the veggies and cooked macaroni. Mix well.
  • Refrigerate for at least 4 hours before serving, but preferably overnight. Homemade Creamy Macaroni Salad is ready to serve.

▶️ The Main Course – Paneer Lasagne

Paneer lasagne is a delicious twist on the classic Italian dish, with layers of spicy paneer & creamy bechamel sauce. This vegetarian version of lasagne is a crowd-pleaser that’s sure to impress your mom on Mother’s Day 2023.

Ingredients:

  • Paneer (cottage cheese) 300 grams
  • Lasagna sheets 6
  • Oil 1½ teaspoons
  • Cumin seeds 1 teaspoon
  • Green chillies chopped 2
  • Onions chopped 2 medium
  • Turmeric powder ¼ teaspoon
  • Red chilli powder 3 teaspoons
  • Garam masala powder 2 teaspoons
  • Salt to taste
  • Onion paste ¼ cup
  • Ginger-garlic paste 1 tablespoon
  • Tomato puree 1 cup
  • Butter 2 tablespoons
  • Fenugreek leaves (methi) 2 teaspoons
  • Fresh cream ½ cup
  • Grated mozzarella cheese as required
  • Fresh coriander sprig for garnishing

Instructions:

  • Preheat the oven to 180ºC.
  • To make the paneer bhurji, heat 1 teaspoon of oil in a non-stick wok and sauté cumin seeds, green chillies, and onion until the onion turns golden. Crumble the paneer, and add turmeric powder, 1 teaspoon of red chilli powder, and 1 teaspoon of garam masala powder. Mix well and sauté before adding crumbled cottage cheese and cooking for 2 minutes. Remove from heat and set aside.
  • For the sauce, heat the remaining oil in another non-stick pan and sauté onion paste for 2 minutes. Add ginger-garlic paste, tomato puree, and mix well. Increase heat and add 1½ cups of water. Stir to mix and cook on medium heat for 10-12 minutes. Add butter and keep mixing. Dry roast dried fenugreek leaves till fragrant. 
  • Add remaining red chilli powder, remaining garam masala powder, and salt to the pan and cook further. Add cream, crushed roasted fenugreek leaves and mix well. Switch off heat.
  • Spread some tomato sauce on the base of a rectangular glass baking dish, and lay 2 lasagna sheets on top. Evenly spread some paneer bhurji and top with grated cheese. Place 2 more lasagna sheets on top, spread some more tomato sauce, and sprinkle grated cheese. 
  • Add the remaining paneer bhurji and top with grated cheese.
  • Place the dish in the preheated oven and bake for 12-15 minutes.
  • Serve hot, garnished with a coriander sprig.
