1: Classic Italian Pasta Dish – Spaghetti puttanesca: A simple yet full of flavours dish that can be enjoyed by one and all. Here’s a recipe for Spaghetti puttanesca:

Ingredients:

  • 1 pound spaghetti
  • 1/4 cup extra-virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1/4 teaspoon red pepper flakes
  • 1 (28-ounce) can of peeled tomatoes, crushed by hand
  • 1/2 cup pitted Kalamata olives, halved
  • 2 tsp capers, drained
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Add water and salt to a large pot and bring it to a boil. 
  2. Once boiled, add spaghetti and cook until al dente.
  3. Simultaneously, heat olive oil in a large skillet over medium heat.
  4. Minutely chop garlic and red pepper flakes and cook until the garlic is fragrant.
  5. Next, add all the crushed vegetables and let them simmer for 10 minutes. 
  6. Once done, move on to adding chopped parsley and season with salt and freshly ground black pepper to taste.
  7. Add the spaghetti to the pot and add the puttanesca sauce. Toss to combine.
  8. Gradually add the reserved pasta cooking water, stirring constantly, until the sauce is creamy and coats the spaghetti.
  9. Serve while it is relishing hot and garnish with additional chopped parsley.

Enjoy this bold flavorful and easy-to-make spaghetti puttanesca with a side of crusty bread. Well, you can pair it with a glass of red wine too!

2: Indian Masala Pasta: A fusion dish made with tangy Indian spices and an authentic Italian taste. Here’s a simple recipe for Indian Masala Pasta:

Ingredients:

  • 1 pound penne pasta
  • 2 tsp ghee or vegetable oil (or the oil of your choice)
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper (optional)
  • 1 (14-ounce) can of diced tomatoes
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh cilantro, for garnish (optional)

Instructions:

  1. Add water and salt to a large pot and bring it to a boil. 
  2. Once boiled, add spaghetti and cook until al dente.
  3. Simultaneously, heat ghee or oil in a large skillet over medium heat.
  4. Add garlic, ginger and cook until the garlic is fragrant.
  5. Next, add all the spices and cook for 1-2 minutes over medium heat.
  6. Once done, add the chopped tomato and cook for 2-3 minutes.
  7. Add the heavy cream and some freshly ground black pepper to taste. 
  8. Gradually add the reserved pasta cooking water, stirring constantly, until the sauce is creamy and coats the spaghetti.
  9. Serve while it is relishing hot and garnish with additional chopped cilantro.

3: One-Pot Pasta: This is your everyday pasta that is made in every household. Here’s a simple pasta recipe that is quick and easy to make:

Ingredients:

  • 1 pound spaghetti
  • 3 tsp extra-virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions:

  1. Add water and salt to a large pot and bring it to a boil. 
  2. Once boiled, add spaghetti and cook until al dente.
  3. Simultaneously, heat ghee or oil in a large skillet over medium heat.
  4. Add garlic, ginger and cook until the garlic is fragrant.
  5. Next, add olive oil and cook for 1-2 minutes over medium heat.
  6. Once done, add salt and some freshly ground black pepper to taste.
  7. Simultaneously add the reserved pasta cooking water, stirring constantly, until the sauce is creamy and coats the spaghetti.
  8. Serve immediately and garnish with grated cheese.
