Ingredients:
- 1 pound spaghetti
- 1/4 cup extra-virgin olive oil
- 4 garlic cloves, thinly sliced
- 1/4 teaspoon red pepper flakes
- 1 (28-ounce) can of peeled tomatoes, crushed by hand
- 1/2 cup pitted Kalamata olives, halved
- 2 tsp capers, drained
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper, to taste
Instructions:
- Add water and salt to a large pot and bring it to a boil.
- Once boiled, add spaghetti and cook until al dente.
- Simultaneously, heat olive oil in a large skillet over medium heat.
- Minutely chop garlic and red pepper flakes and cook until the garlic is fragrant.
- Next, add all the crushed vegetables and let them simmer for 10 minutes.
- Once done, move on to adding chopped parsley and season with salt and freshly ground black pepper to taste.
- Add the spaghetti to the pot and add the puttanesca sauce. Toss to combine.
- Gradually add the reserved pasta cooking water, stirring constantly, until the sauce is creamy and coats the spaghetti.
- Serve while it is relishing hot and garnish with additional chopped parsley.
