- Mix well. Shape into ladoos while the mixture is still warm (too cold and it won’t bind)
- If it’s crumbling, add a tablespoon more melted ghee. If too wet, add a little more besan
The secret to great besan ladoo is patience during roasting. Rush it and the besan tastes raw. Burn it and it’s bitter. Low flame, constant stirring, golden colour, nutty aroma. That’s your signal.
How to Make Coconut Barfi and Karanji
Coconut barfi recipe (3 ingredients, 15 minutes):
- Cook 2 cups desiccated coconut with 1 can condensed milk on low flame for 10 minutes, stirring constantly
- Add cardamom. Pour into a greased tray. Flatten evenly
- Press chopped pistachios on top. Cool, cut into diamonds. Done
Karanji recipe (Maharashtrian half-moon pastry):
- Make a stiff dough with 1 cup maida, 2 tbsp ghee, and water
- Filling: dry roast coconut and poppy seeds, mix with powdered sugar and cardamom
- Roll thin circles, place filling on one half, fold into half-moon, seal edges with a fork

- Add 1 tbsp ghee, cardamom, and top with cashews and raisins fried in ghee
