One of the most beloved types of biryani in India is Hyderabad biryani. The aromatic rice and the sumptuous flavors leave you craving for more. Mind it, ‘Your stomach might be full but your heart won’t be’. In the late 1600s, Nizam’s chef cooked around 47 new types of biryani, of which one was Vegetable Biryani, known as Tahiri Biryani.

There are two ways of cooking Hyderabadi Biryani: Kachi & Pakki. In Pakki Biryani, rice, and meat are cooked separately, then layered in an earthen pot. To make it more delicious, saffron, and fried onion are layered over the rice for flavor and aroma.

In Kacchi biryani, the layers are added in sandwich form in an earthen pot and then sealed with a dough, making it a lid. Also, rice, and meat are cooked together.

Once the rice is 70% done, meat and rice come together in Handi, stewing them for hours for tender flavors. If you want to taste the Awadhi flavors, then Lucknowi Biryani is the perfect choice.
