The Best Palak Paneer Recipe

Ingredients:
- 450g spinach, washed & chopped
- 1 cup (200g) paneer, cut into small cubes
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 2 green chillies, finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/4 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- Water as needed
Instructions:
- In a pot, bring water to a boil & blanch the spinach for 2-3 minutes. Drain & run the spinach under cold water to stop the cooking process.
- In a blender or food processor, blend the spinach until it forms a smooth puree. Set aside.
- In a pan, heat the oil & add cumin seeds. When the seeds start to splutter, add onion, ginger paste, garlic paste & green chillies. Saute until the onion turns golden brown.
- Add chopped tomatoes & cook until the tomatoes are soft & mushy.
- Add the coriander powder, garam masala powder, turmeric powder, & salt. Stir well.
- Add the paneer cubes & mix until they are coated in the spice mixture.
- Add the spinach puree & stir well. Add water as needed to achieve the desired consistency.
- Cook on medium heat for 5-7 minutes, stirring occasionally, until the paneer is cooked through & the flavors have blended together.
- Serve hot with rice or naan.
