  • 1/4 cup milk (optional)

Instructions:

  1. Drain the soaked moong dal and add it to a pressure cooker or saucepan with 4 cups of water.
  2. Cook the moong dal until it’s soft and mushy, about 15-20 minutes in a pressure cooker or 30-40 minutes on the stovetop.
  3. Once cooked, drain any excess water from the moong dal and transfer it to a blender or food processor.
  4. Blend the cooked moong dal until smooth and creamy.
  5. Heat the ghee or butter in a large saucepan over medium heat.
  6. Add the suji (semolina) and sauté for a minute until it turns light golden brown.
  7. Add the blended moong dal to the saucepan and stir continuously to prevent lumps.
  8. Cook the mixture for about 5-10 minutes until it thickens and starts to leave the sides of the pan.
  9. Add the sugar and cardamom powder to the mixture. Stir well to combine.
  10. If using, add the milk to achieve a creamier consistency. Cook for an additional 2-3 minutes.
  11. Once the halwa reaches your desired consistency, turn off the heat. Serve the moong dal halwa warm, garnished with chopped nuts.

  1. In a saucepan, combine the moong dal and 4 cups of water. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the dal is soft and cooked through.
  2. In a separate pan, heat the oil or ghee over medium heat. Add the cumin seeds and mustard seeds and let them crackle for a few seconds.
  3. Add the diced onion and sauté until it’s translucent, about 3-4 minutes.
  4. Add the minced garlic and green chili (if using) and sauté for another minute.
  5. Stir in the turmeric powder, coriander powder, and garam masala. Cook for 2-3 minutes, allowing the spices to bloom.
  6. Add the cooked moong dal to the pan and stir to combine. Season with salt to taste.
  7. Simmer the savory moong dal for an additional 5-10 minutes, stirring occasionally, to allow the flavors to meld.
