  • ¼ tsp ground clove
  • ¼ tsp ground ginger
  • 1 cup brown sugar or jaggery
  • ½ cup butter or ½ cup oil
  • 1 tsp vanilla extract
  • ¾ cup yogurt or buttermilk or dairy-free yogurt
  • ½ cup milk
  • 2 tbsp maple syrup or honey
  • 1 tbsp lemon zest (optional)
  • ½ cup chopped candied ginger (optional for added spice)
  • A pinch of salt

For Decoration:

  • Marzipan (optional)
  • Icing sugar or glaze (optional)

Christmas Cake Preparation

  • The first step to making an exceptional Christmas cake is soaking the dried fruits and nuts. 
  • Combine your dried fruits (raisins, sultanas, currants, dates, etc.), chopped mixed nuts, and orange juice in a large mixing bowl. (Optional: Add rum or brandy) 
  • Stir well and let it sit for at least 12 hours, or ideally, overnight.
  • Once your fruits are soaked, preheat your oven to 160°C (325°F). 
  • Grease a round or square cake tin (around 8-9 inches) and line the bottom with parchment paper.
  • In a large mixing bowl, sift flour, baking powder, baking soda, cinnamon, nutmeg, clove, ginger, and salt together. 
  • Whisk together the melted butter (or oil), yogurt, milk, vanilla extract, maple syrup (or honey), and lemon zest in another bowl. (You can also add in the chopped candied ginger for extra flavor.)
  • Add the wet ingredients to the dry ingredients and mix until just combined. Don’t overmix the batter, as this can result in a dense cake. 
  • Once the batter is smooth, fold in the soaked fruits and nuts along with any remaining soaking liquid.
  • Pour the batter into the prepared cake tin, spreading it evenly. 
  • Tap the tin on the counter a few times to remove any air bubbles. 
  • Place the cake in the preheated oven and bake for 45-60 minutes, or until a skewer or toothpick inserted into the center comes out clean. 
  • If the top starts to brown too quickly, cover it loosely with aluminum foil.
  • Once done, remove the cake from the oven and let it cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
