Ingredients for this easy healthy breakfast recipe:

  • Powdered barnyard millets or Samak Rice (just grind them in a grinder to a powder consistency)
  • Buckwheat flour (kuttu ka atta)
  • Himalayan Pink Rock Salt (Sendha Namak) or regular salt
  • Cooking oil of your choice

Kuttu & Samak Rice Dosa Recipe: (Step by Step Guide)

Step 1: Mix the powdered millets (Samak Rice) and buckwheat flour (kuttu atta) in a 1:1 ratio.

Step 2: Add water to the mixture and stir to create a semi-viscous paste.

Step 3: Add salt to taste and mix well.

Step 4: Heat a pan on medium and grease it with oil.

Step 5: Spread the batter thinly on the pan to form a crepe.

Step 6: Cook until golden brown on both sides.

Step 7: Serve with coconut chutney, green mint chutney, or any sauce of your choice.

2. Whole Green Moong Cheela (Green Gram Savoury Pancakes)

Ingredients for this healthy breakfast recipe

  • 1 cup green mungbean (whole green gram)
  • ½ cup rice flour
  • ¾ cup water
  • Salt
  • ½ ginger, grated
  • 3-4 cloves of chopped garlic
  • A pinch of Red chilli pepper powder
  • Chopped Curry Leaves and Coriander (20 g each)

Whole Green Moong Cheela Recipe

Step 1: Soak the green grams in water for about 6 hours or leave them soaked overnight.

Step 2: After soaking, grind the mixture into a batter.

Step 3: Add all the other ingredients to the batter and mix well.

Step 4: Check the salt and spice levels, and adjust to your liking.

Step 5: Heat your flat pan on medium flame and grease it with the oil of your choice.

Step 6: Spread the batter on the pan and let it cook for 2 minutes on medium flame.

Step 7: Once done, flip it over and cook the other side for about a minute and a half.

Step 8: Serve with mint chutney, tomato sauce, or coconut-peanut chutney.

3. Egg Shakshuka and Toast Indian style

It is full of protein, deliciousness, and essential micronutrients, and is easy to prepare. Although this dish is of North African and Middle Eastern origins, we have our way of turning it into one of the easy breakfast ideas Indians can get used to pretty quickly.

Ingredients (per person):

  • 2 eggs
  • Slices of sourdough or any bread of your choice
  • ½ green bell pepper (capsicum), chopped
  • ½ red bell pepper, chopped
  • ½ yellow bell pepper, chopped
  • 2 medium onions, chopped
  • 2 medium tomatoes, chopped
  • 100 g mushrooms, chopped (optional)
  • 3-4 cloves of garlic, chopped
  • 2 green chillies, chopped
  • 6-10 basil leaves (optional)
  • Spices: salt, red chili flakes, thyme, oregano, black pepper, cumin powder

Egg Shakshuka and Toast Recipe (Indian Style )

Step 1: Heat a serving spoon of your cooking oil in a pan over medium flame.

Step 2: Once the oil is hot, add garlic and green chilies. Cook for 30-45 seconds until golden.

Step 3: Add onions and stir until they become translucent.

Step 4: Add chopped bell peppers and tomatoes. Cook for 2-3 minutes.

Step 5: Add mushrooms and cook until they are well done.

Step 6: Add spices such as a pinch of thyme, 1 tsp of oregano, chili flakes, black pepper, and salt.

Step 7: Use your spatula or ladle to create gaps in the sauce mix, one for each egg.

Step 8: Break the eggs into these gaps and let them softly poach.

Step 9: Season the eggs with a pinch of salt, black pepper, oregano, and chili flakes.

Step 10: Once the eggs are half-fried, turn off the heat and serve the dish in the pan.

Step 11: Enjoy with a side of bread slices or toast.
