Hyderabadi Biryani

Mind it, ‘Your stomach might be full but your heart won’t be’. In the late 1600s, Nizam’s chef cooked around 47 new types of biryani, of which one was Vegetable Biryani, known as Tahiri Biryani.

There are two ways of cooking Hyderabadi Biryani: Kachi & Pakki. In Pakki Biryani, rice, and meat are cooked separately, then layered in an earthen pot. To make it more delicious, saffron, and fried onion are layered over the rice for flavor and aroma. 

In Kacchi biryani, the layers are added in sandwich form in an earthen pot and then sealed with a dough, making it a lid. Also, rice, and meat are cooked together.

Lucknowi Biryani

Lucknowi Biryani, which is also known as Awadhi Biryani is another type of biryani that Indians love. To flavor the rice, we use star anise, saffron, and cinnamon. It has a distinctive dum phukt cooking method where rice is partially cooked, away from spice-infused meat. Once the rice is 70% done, meat and rice come together in Handi, stewing them for hours for tender flavors. If you want to taste the Awadhi flavors, then Lucknowi Biryani is the perfect choice. You can also replace meat with veggies of your choice.

Mandi Biryani

A Saudi Arabian biryani, a traditional dish of Yemen, which is popular in the Malabar region of India is Mandi Biryani. You can cook the small-sized brown rice, and boil chicken separately with spices. After this, roast the chicken or meat on tandoor to experience the amazing flavors of Mandi. In the end, all you need to do is add rice and smoked meat together, garnish it with coriander leaves, and serve it with yogurt sauce. Kolkata Biryani

If you want to experience the eastern flavors, then Kolkata Biryani is the type of biryani that you need to have. It’s a little different than other biryani that you eat as Kolkata biryani has potato in it. Yes, most people don’t like potatoes with everything but Kolkata people like their lip-smacking biryani with potatoes. The meat and potatoes are cooked and then the rice is layered for a delightful texture, allowing flavors to blend perfectly. Thalassery Biryani

This Malabari, South Indian biryani doesn’t use basmati rice. They use small-sized Khyama or Jeerakasala rice for cooking delicious biryani. Cook the rice and other important components separately with regional flavors. Apart from that, people use lime, curd, mint leaves, ginger garlic paste, onion, and coriander.
