How to Make a Veg Biryani Recipe at Home?

Ingredients

To make this Veg Biryani Recipe you will require the following:

  • Basmati Rice: 2 cups(Alter as per requirement)
  • Chopped mixed vegetables, potatoes, carrots, beans, and peas: 1 cup
  • Thinly Sliced Onion: 1
  • Finely Chopped Tomatoes: 2
  • Plain Yoghurt: 1/2 cup
  • biryani masala powder: 2 tablespoons
  • ginger-garlic paste: 1 tablespoon
  • turmeric powder: 1 teaspoon
  • red chilli powder: 1 teaspoon (Can adjust according to your preference)
  • A handful of freshly chopped mint leaves
  • A handful of chopped fresh coriander leaves

Here are the steps to the Veg Biryani Recipe

Step-1: Soaking The Rice

To get long, fluffy rice grains, thoroughly rinse the rice in cold water until the water runs clear. Followed by this, let the rice soak in water for about half an hour.

Step-2: Prepare the spices and vegetables.

Heat the ghee or oil in a sizable pan over medium heat. On the side, thinly slice the onions and chop the tomatoes. Sauté the whole spices (cinnamon stick, cardamom pods, cloves, bay leaf) for a minute. Cook the thinly sliced onions after adding them until they are golden brown.

Add ginger garlic paste and continue to sauté for one more minute. Add salt, red chilli powder, turmeric powder, and chopped tomatoes. Cook the vegetables for 5–6 minutes, stirring frequently, until partially cooked.

Step-3: Cook the rice

Heat a pot of water to a boil. While the water is boiling, add the drained rice. Ensure the rice is only 70-80% cooked. As the rice will cook more in the biryani, avoid overcooking it.

Step 4: Bring together the Layers of Biryani

You may either use the oven by setting it to 350°F (180°C) or use a heavy-bottomed pan to cook on the stove.

Spread a layer of partially cooked rice at the bottom of a deep oven-safe dish or pan with a heavy bottom. Add a layer of the cooked vegetable mixture. Top with chopped mint and coriander leaves and biryani masala powder. 

Repeat the layers of rice and vegetables, finishing with a layer of rice on top. Depending on the quantity, you can create multiple layers. Over the top layer of rice, evenly distribute the plain yoghurt.

Step 5: Cooking the biryani

While cooking it is integral to keep the steam inside the dish, hence tightly cover it with either a foil or a lid. Place the dish over low heat on the stove and allow the biryani to simmer for 20 to 25 minutes so the flavours can combine to do their magic.

Step-6: Serving

Allow it to cool for 5–10 minutes after being taken off the heat. Using a fork, gently fluff the rice layers, incorporating the rice with the vegetables.
