Besan Ladoo

Ingredients:

  • 2 cups gram flour (besan)
  • 1 cup powdered sugar
  • ½ cup ghee
  • ½ tsp cardamom powder
  • Chopped nuts (optional)

Instructions:

  • Heat ghee in a heavy-bottomed pan. Add the gram flour and roast it on low heat until it turns golden brown and aromatic.
  • Remove the roasted besan from the heat and let it cool slightly.
  • Once warm, add powdered sugar and cardamom powder. Mix well.
  • Grease your palms with ghee, take small portions of the mixture, and roll them into balls.
  • If desired, press a piece of chopped nut into the center of each ladoo before it sets.

Coconut Ladoo

Ingredients:

  • 2 cups grated fresh coconut
  • 1 cup condensed milk
  • ½ tsp cardamom powder
  • Chopped nuts (optional)

Instructions:

  • In a pan, combine grated coconut and condensed milk.
  • Cook on low heat until it thickens, stirring continuously.
  • Once the mixture is thick, add cardamom powder and mix well.
  • Remove from heat and let it cool slightly.
  • Grease your palms with ghee and take small portions of the mixture to form round ladoos.
  • Roll the ladoos in desiccated coconut for an extra layer of flavor and texture.

Kheer

Ingredients:

  • 1/2 cup rice (preferably basmati or any short-grain rice)
  • 1 liter milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 tsp cardamom powder
  • 2-3 tbsp ghee (clarified butter)
  • Chopped nuts (almonds, cashews, pistachios) for garnish
  • Raisins (optional)
  • Saffron strands (optional, for added flavor and color)

Instructions

  • Rinse the rice under running water until the water runs clear.
  • Soak the rice in water for about 30 minutes.
  • In a heavy-bottomed pan, bring the milk to a boil over medium heat.
  • Stir occasionally to prevent it from burning.
  • Once the milk reaches a boil, drain the soaked rice and add it to the pan. Reduce the heat to low and let it simmer.
  • Stir the mixture frequently to ensure even cooking. Allow it to cook for about 30-40 minutes, or until the rice is soft and the mixture thickens.
  • Once the rice is cooked, add sugar and mix well. Cook for another 5-10 minutes until the sugar dissolves completely.
  • Stir in the cardamom powder and saffron strands (if using). Mix well to combine all the flavors.
  • In a small pan, heat ghee over low heat. Add chopped nuts & raisins (if using) and sauté until they turn golden brown.
  • Pour the nut and ghee mixture into the kheer and stir well. This adds an extra crunch and richness to the dessert.
  • You can serve rice kheer warm or chilled, depending on your preference. If serving chilled, allow it to cool to room temperature before refrigerating.
  • Before serving, you can garnish with additional nuts or a sprinkle of cardamom powder for presentation.
