3 Healthiest Breakfast Recipes(Indian Style Edition)

Millet & Vegetables Upma

Millets are special whole grains that we receive from specialized grasses. They are rich in proteins, fibre, complex carbs, and essential vitamins and minerals. That’s why, this dish has made it to our list of healthiest breakfast recipes. It is:

  • Full of macro and micronutrients
  • Easy and quick to prepare

Ingredients

  • ½ cup Kodo Millet
  • 1.5 cups Water
  • 1 cup Mixed Vegetables (cauliflower, carrot, broccoli, bell pepper, aubergine)
  • 1 small Onion, finely chopped
  • 1 small Tomato, finely chopped
  • 1-2 Green Chilies, finely chopped (to taste)
  • ½ inch Ginger, finely chopped
  • ½ teaspoon Turmeric Powder
  • 1 teaspoon Cumin Seeds
  • 1 tablespoon Oil/Ghee
  • 1 teaspoon Salt (to taste)

Millet & Vegetables Upma (Serves 2)

  1. Soak 1 cup of Kodo millet in 3 cups of water for 15-20 minutes.
  2. Chop your vegetables into small pieces as per your preference.
  3. Blanch broccoli separately before chopping if you’re adding it to the dish.
  4. If using chicken, clean and prepare it. Optionally, smoke or grill it until medium-done separately.
  5. Heat a pan on medium and grease it with oil.
  6. Once the oil is heated, add the ginger and garlic, and cook until light brown.
  7. Add the chopped vegetables and sauté them for 2 minutes.
  8. Add 1 and ½ teaspoons of salt, and ½ teaspoon each of red chili powder, turmeric powder, coriander seed powder, and amchur powder. Sauté for 1-2 minutes.
  9. Optionally, add a dash of chili flakes and oregano on top.
  10. Drain the soaked Kodo millets and add them to the mix. Add 1 cup of water.
  11. Mix and sauté for 3 minutes. Let it cook until the water completely evaporates.

Voila! Your Millet & Vegetables Upma is ready. Serve it hot and enjoy it with ketchup! This recipe is one of the healthiest breakfast recipes, perfect for a nutritious start to your day.

Sabudana Tikki (Sago Cutlets or Sago Patties)

Sago Cutlets or Sago Patties are popular in North and Western India as sabudana vada or sabudana tikki. People prepare this dish extensively during months of fasting known as ‘Navratra’ due to it being one of the healthiest breakfast recipes to create.

They are also a popular snack in the states of Gujarat, Rajasthan, Maharashtra, Punjab, Haryana, UP, and Bihar. 

However, the version we brought you is way healthier than the usual recipe. This recipe is full of protein, fibre, and complex carbs, making it easier for you to hit your macro goals on medium-carb days.

It makes for a filling breakfast that will keep you satiated and give you sustained energy for a longer duration.

Ingredients

  • 1 cup Tapioca pearls (sago)
  • 1 cup chickpeas (kabuli chana)
  • 120g of Paneer (Indian Cottage Cheese)
  • 2 large OR 3 medium potatoes
  • 1 ginger
  • 3-4 green chillies
  • ½ cup roasted peanuts
  • Coriander leaves (40g)
  • Salt & spices

Sabudana Tikki Recipe

  1. Soak tapioca pearls in water overnight or for at least 5 hours.
  2. Soak chickpeas overnight or for at least 5 hours.
  3. Boil potatoes in a pressure cooker for 3-4 whistles or in an open pan for 12-15 minutes.
  4. Boil chickpeas in a pressure cooker for 4-5 whistles or in an open pan for 15-20 minutes.
  5. Drain the water from the soaked tapioca pearls and set aside.
  6. To make this healthiest breakfast recipe more delicious, peel and mash the boiled potatoes. Add and mash the boiled chickpeas.
  7. Add crumbled paneer to the potato and chickpea mash.
  8. Roast a handful of peanuts using a little butter on a hot pan and add them to the mash.
  9. Add sliced ginger and chopped coriander leaves to the mash.
  10. Combine the drained tapioca pearls with the mash.
  11. Mix in 3 teaspoons of salt, 2 teaspoons of red chili powder, and 1 teaspoon each of turmeric powder, amchur powder, and coriander seed powder. Mix thoroughly.
  12. Heat a pan on medium flame and grease it with cooking oil.
  13. Form small balls of the mash mix, flatten them into patties/cutlets, and place them on the pan.
  14. Cook the cutlets until golden brown on both sides.
  15. Serve hot with ketchup or mint chutney.

Egg Bhurji and Toast Indian style

Eggs are the most favored breakfast item in the whole world. They are easy to find, easy to cook, and full of nutrition. It’s a versatile ingredient that can be cooked and served in many different ways.

Egg Bhurji (Indian Style Scrambled Eggs with Veggies) is fairly easy to make. When served with a toast of sourdough, whole wheat bread, or multigrain toast, it makes for a great wholesome breakfast. Now, here’s a nice recipe that you can try for it!

Ingredients (Serves 2)

  • 4 eggs
  • Slices of sourdough or any bread of your choice
  • ½  green bell pepper (capsicum) chopped
  • 2 medium onions chopped
  • 2 medium tomatoes chopped
  • 100 g mushrooms chopped (optional)
  • 3-4 cloves of garlic, chopped
  • 2 green chillies, chopped
  • Spices like salt (½ tablespoon), red chilli powder (1 teaspoon), turmeric (1 teaspoon), coriander powder (1 and ½ teaspoon)
  • A pinch of seasonings like oregano, black pepper, chilli flakes

Egg Bhurji and Toast Indian style Recipe

  1. Heat a serving spoon of your cooking oil in a pan over medium flame.
  2. Once the oil is hot, add the garlic and green chilies. Cook for 30-45 seconds until golden.
  3. Add the onions and stir until they become translucent.
  4. Add the chopped bell peppers and tomatoes, cooking for 2-3 minutes.
  5. Add the mushrooms and cook until they are well done.
  6. Add your preferred spices and stir the veggies for a minute.
  7. Break 4 eggs into the pan and stir continuously. The egg will stick to the sides of the pan, but keep scraping it off and stirring to ensure even cooking.
  8. Cook for a minute until the eggs are fully cooked, then turn off the heat.
  9. Toast the bread slices and season them with some oregano.
  10. Serve the egg bhurji with the toast and enjoy!
