  • 4-5 medium-sized carrots
  • 2 cups full-fat milk

  • 2-3 tablespoons ghee
  • 1/4 cup chopped nuts
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron
  • Raisins (optional)

Instructions:

  • Peel and grate the carrots finely.
  • In a heavy-bottomed pan, heat 1 tablespoon of ghee on medium heat.
  • Add the grated carrots and saute for 2-3 minutes, stirring occasionally. This helps to soften the carrots.
  • Pour in the 2 cups of milk and bring the mixture to a gentle boil.
  • Lower the heat and let it simmer, stirring occasionally. Allow milk to reduce by half, which will take about 15-20 minutes.
  • Once the milk is reduced, add sugar and cardamom powder. Stir well and continue to cook on low heat, allowing the sugar to dissolve completely.
  • The gajar ka halwa will thicken further as the milk evaporates.
  • Add the remaining ghee (about 1-2 tablespoons) and chopped nuts (cashews, almonds, or pistachios).
  • Stir everything together and let it cook for another 5-7 minutes until the halwa reaches a pudding-like consistency and the ghee starts to separate from the mixture.
  • Add a few saffron strands for extra flavor and color. You can also add raisins at this if you like.
  • Once the gajar ka halwa has thickened and the flavors have melded together, remove it from the heat.
  • Serve warm, garnished with extra nuts or a sprinkle of cardamom powder.
